Savory Fruit Topped Chicken Breast

4 6 oz chicken breast halves (accommodate with another protein of your choice for different styles of eating)
2 tablespoon extra virgin olive oil
1 peach, peeled, pitted, and diced
1 plum, peeled, pitted, and diced
1 teaspoon honey
1 teaspoon chopped mint
3 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoon sea salt
1 teaspoon dried parsley
1 teaspoon dried thyme
24 spears asparagus
Rinse chicken, pat dry. Season with spices, saving 1 tablespoon garlic powder. and sea salt for asparagus.
In a saute pan, heat olive oil over medium heat.
Add chicken, saute for 3-4 min per side (may vary based on chicken size)
Remove chicken from pan, set aside keeping warm.
Cut the bottom part of the asparagus stems about 1-2 inches depending on stem.
Add asparagus to pan, top with remaining garlic and sea salt.
Saute on medium heat until tender.
For savory fruit topping, place all diced fruit, honey, and mint in a medium bowl. Combine thoroughly.
Plate chicken alongside asparagus, top with fruit topping.
Enjoy!
**May use leftover chicken and fruit topping to make a salad. Just add romaine lettuce and top with chicken and fruit for lunch tomorrow :)
